Made from Montepulciano grapes from a single 30-year-old vineyard, harvested at the end of October with a yield of about 60 quintals per hectare. It ferments spontaneously in stainless steel, with the help of pied de cuve, where it macerates for about 30 days. It is aged in large barrels (20 hl) and tonneaux for 14 months.
